As for the path to being an immortal
you start by circulating chi throughout your entire body by opening all the gates you have. Kinda like Rock Lee in Naruto except people in the Xianxia world will find his method "completely retarded and suicidal." Then you have to create a sea using that chi and use that sea to create a giant chi reactor in your body. This reactor will use the chi to produce an egg which will be your soul while you go into immortality.
Afterwards you are suppose to separate that soul from your body and form it into a stable entity in it of itself while the heavens try to strike you down with lightning, fire, and pretty much everything in its arsenal. Then once the severing is done you are suppose to completely do away with your mortal form and hatch into your new form and become a spirit which is basically more of a universal concept (see Madokami).
After you become a spirit you can influence the world but at the same time the laws of the world still has control over you so you are suppose to break out of the world altogether so you can influence it but it can't influence you and there you have it you are now an immortal. The heavenly court will probably see you as an outsider and do fuck with you but now you are basically a god.

I think Isekai LNs or fantasy LNs in general would fair better if they kept a more morally grey approach to both sides rather than just one side being a big bad. Too often it's either the demon king being big bad end boss or that the demon king/queen is good and it's the humans manipulated by the church who are the true evil, if they instead introduced characters from both sides early on, explained their differences as well as similarities and their own selfish agendas which caused them to pick a side it'd be more enjoyable (as long as it didn't end up with both sides teaming up).
It's the reason I got interested in Overlord, The Girl who ate Death and even Katahane no Riku (to some extent). Both sides had their story explained, neither were the absolute evil but merely had their own agendas or fears which caused them to clash and we end up seeing selfish, evil peoples pretending to be angels while other more down to earth characters who in the end must do their duty painted out as demons.
And for MCs I think having some starting cheat is enjoyable, take Warlock of the Magus World, he has an AI chip which gives him an advantage over his peers but still can't hold a candle to those a level above him, a simple cheat which improves with the character's growth is far more enjoyable than a character gaining some end-game level cheat from the beginning which allows them to steamroll most opponents while they shout "I-Impossible!" up until they meet the elites of the humans/demons.
Also harems are the cancer that's ruining the genre/sub-genre and must be culled.

Unfortunately, Overlord had its issues as the points of view constantly changed and the lack of development especially for the main character has always been the biggest flaw. And pretty much, it is always the idea of Ainz is all powerful or all evil perspective of others makes it really hard to find it ironic constantly without a certain degree to make it more interesting. Too many characters that have a changing perspective really hampers on the real focus (I enjoyed Sebas and Tsuare, that was actually interesting).

Katakane no Riku makes itself bad under the fact that it portrays and shows the evil that the protagonist is really doing. At this point, she's only literally killing machine that lacks depth. Just as bad as Eren from SNK. If there's one thing that the story needs, it's a deterrent for the protagonist. Like someone that the mc newly falls in love with and make her reflect on her life. It would improve it.
