In general it seems Yuujiro is more fond of straightforward brawlers like Oliva, Pickle or Hanayama (see their recent little fight) than martial artists. The former know their place in the pecking order - either they can overpower someone or not. The latter are putting on airs through tricks Yuujiro isn't really impressed with since he could do them better. Grappler Baki is about establishing Baki as a character, exploring his past and motives, and revealing all of the major characters.
New Grappler Baki is about the major characters' stories and their fights, Baki maturing into his late teens through romance and sexual congress, introducing Baki's father as a multi-faceted character (but not to Baki himself) and establishing the differences between the world the Baki fighters live in and the world ordinary humans live in (hence the Ali Jr arc).
Baki: Son of Ogre is about Baki maturing into true adulthood and conquering his own fears, anxieties, regrets; coming to understand Baki's father with absolute clarity, and completing their "father-child" relationship. The series' tone matures with him - the most mature stuff in all of Baki is in here. It's centered around the approach and eventual confrontation between Baki and his father.
Baki Dou is post-confrontation: Every one of the major characters is bored, due to the unbelievable spectacle that was the father-son fight. There's a plateau that they've all reached, and there is really very little way of getting stronger beyond that point, nor is there any reason to do so - they already lack any real opposition. The benefactor of the strong realizes this and makes plans to create a new, absurdly strong threat to the characters.

The way people completely ignore the ridiculousness and flamboyance of the Shigurui manga is hilarious but I think I know why that's the case. The anime significantly downplayed that aspect and was presented more as a traditional "hardcore manly anime". People got introduced to it through the anime so when they checked out the manga and the overall story was the same, the ridiculous gayness sort of just became an elephant in the room that everyone was too afraid to point out.

Shibukawa describes the first fight as a 'game' and 'playing around', and that their second fight is a 'duel'. It's not a term that implies extreme brutality like 'real fight' does; he's just saying that he's actually paying attention this time.
Jr tries to refer to his first fight with Doppo as a 'fight to the death', and Doppo dismissively refers to it as a 'match' (does actually use "shoubu" in this case); says that unfair fights are simply how the world works re: himself choosing to fight a wounded Jr.

Did anyone else hate how most of the early Baki fighters were pro wrestlers? I couldn't take the shit seriously at all, with the author treating essentially actors as equivalent to real accomplished martial artists.
