Because that's what it was always building to, it was always going to be a story about fulfilling an elektra complex.
That's why the post time skip part where Rin's a teenager dealing with drama and trying to figure out what love and mothers are and shit is longer and at the end Daikichi just randomly decides he wants her romantically too. Because it was never about him, it was about women living out their Elektra complexes through Rin and her non related father figure
