Because they feel different ? From the less flashy colors to quieter sound mixing, from different type of artstyle to older animation techniques, you just want to watch something else.

I often get that reaction with anime from late 90s to early 2000s.

I do too but I also include 80s anime.
I try not to binge-watch shows in one era or else I'll get tired of it.
A little bit of everything is always nice and lets you appreciate anime more.
