But Pucci wasn't part of 'fate,' he controlled it himself. Pucci was re-creating the worlds, but like you said everyone who died in these worlds would come back differently. Fate preceded like normal, and the same circumstances would happen if you were still alive, no matter what.
Except to Pucci, because he wasn't controlled by fate. But he messed up and gave Emporio the power to kill him, meaning he effectively beat fate.
And because of this, Pucci dying means that Stone Ocean effectively never happened, because Pucci no longer exists, and fate was altered. Jolyne was never framed for a murder, Pucci never received the bone from Dio, effectively nothing in SO ever happened.
