That means that Pan's child will be like 12.5% Saiyan and so on and so forth until the Saiyan genetics in the family tree goes down to like 1%, though at the end of GT Goku JR. and Vegeta JR were able to turn Super Saiyan and they only had like 1% of Saiyan genetics in their DNA.
I'm talking about the Vegeta and Goku look alike kids at the end of GT when Pan was an old woman, she was like 80 or some shit. It's also kind of sad because at the end of GT everyone was pretty much dead, like Bulma, Videl, Krillin, etc. I'm not sure if the Saiyans were dead since they live longer, but I'm sure Gohan, Goten, Trunks, Vegeta were all dead. Well, Chichi and Goku's relationship is supposed to be one big gigantic joke. Two people from the country get married, Chichi tells Goku that Gohan should study and go to school, Gohan doesn't train, etc etc.
The problem is that a joke can only be so funny for so long, and this is Super, so whatever part of a character's personality they remember will be multiplied by 10 so that's all they've got going for Chichi.

The problem with Gohan is that he has the potential to be just as strong if not stronger than the new two main characters, and he has a brain for common sense BUT
a) We can't have a third guy almost as strong as the two, because it would ruin the good ol' Goku/Vegeta rivalry, because he's Goku's son, not some third guy
b) They don't know what else to do with him
c) Most importantly, he's not Goku OR Vegeta
So, take away his strength, and remove his agency, and then you've got some weird version of adult Gohan that acts like he did when he was a kid, but he has a baby, I guess.
This is the Goku+Vegeta show. Non-full blood Saiyans need not apply.

We've already gotten episodes focused on minor characters though, like the Satan one, or the beginning of the RoF arc. Or the two BoGs episodes after Goku's battle in Kaioh's planet. Or Piccolo's one episode in the tournament.
Yeah, it's not ideal, but you don't seem to realize how bad GT was in comparison. The RoF episodes by themselves already had given Piccolo more screentime than he had through all of GT, and then he also got one episode in the tournament.
GT had a SINGLE episode between the Baby and Super 17 arcs focusing on other characters.
And even in the Super 17 arc, when it pulled the old "Goku can't arrive on the battlfield on time and the others must hold on" it couldn't really remove the spotlight from Goku completely and had to give him the stupid subplot with him fighting Cell and Freeza in hell.

Look at the interview with Toriyama and Toyotaro. Both seem to pretty much believe that Gohan's story was finished with him leaving battles behind (symbolized by losing his gi, which is even mentioned in the interview). The whole "I saw my mistake and I'm going to train to prepare for future battles!" thing from the anime was probably just the anime staff wanting to please Gohan fans, and not part of Toriyama's outline for the series.
