it doesn't work really well on the giga kabane because the other kabanes are already dead at that point so there's no crowding and he can move rather freely

Make it a team-based multiplayer combat game.
One side plays as humans, using guns to kill Kabane and the other side plays as Kabane that learned to use weapons and fights in melee with back up from computer controlled normal Kabane.
You could even do special modes like a mode where any human player killed joins the Kabane team. With a single player campaign mode of course, any game that is exclusively multiplayer is garbage.

Because you have to call someone something to differentiate them and give them identity within a group, which explains why No-name introduces herself with a nickname. Only thing here is that her name has meaning other than being simply a name, undoubtedly on purpose, one which native speakers understand when they hear it; they're clued in from the get-go.
But without translation, the meaning is lost for non-speakers. Imagine the confusion if later on "Mumei" is given an actual name to replace her lack of one. Given what a couple of locomotive engineers managed to figure out in their spare time, surely those chucklefucks whose actual job is to be researching the kabane would know everything they do and more.
So why don't they disseminate important information to the general population in a more organized effort to increase survival? Even the most basic fact, "Kabane are attracted by blood" could be exploited to make escaping Kabane less of a mad stampede and more of a procedure (like, having stores of blood that can be used to create decoy/diversion).
That "Kabane is not a curse but a disease" should not be anything less than general knowledge - the more informed your populace is about something the less irrational they will be about it and the more effectively they can respond to a situation involving it. Applying a tourniquet to and amputating bitten limb should be standard procedure that all soldiers are trained in.
