Another mentioned that it is because he risked his life and broke her out of a berserk state, but that makes it sound really shallow, like if Subaru was the hero and deserved all the bitches, thus not really making it different to a reason you would find in another light novel.
He also still reeks of witch, which should make her more cautious. An anon informed me that although he did things that a cultist wouldn't do, why that doesn't keeps her more on guard is rather convenient. A possibility is that the dog creatures were just pawns to make Subaru look good in front of the manor, so that they lower their guard. A cultist could be twisted enough to hurt himself in order to make himself look pitiful, thus earning favor more easily.
That same anon mentioned a scene where Emilia "comforts him [and] she really couldn't hold her stance against him anymore". If Rem lives with Emilia and she know she's kind, why doesn't she doubts him even more, thinking he (or the witch responsible for the curse) could be plotting something?
I get that gratitude is to be expected if he saved a lot of people, but love? a simple reasoning like this would only lead me to believe that Rem overall purpose in the story is to love MC and get in a coma.
Another reason I just came up is simply because Ram is a lonely soul and simply fell for the first kind guy on his way. Something like Emilia, but on a more romantic and less sibling-esque way.
