Goku prepares for more than a year for the arrival of the Sayins. Vegeta and Nappa arrive on Earth with the intention of destroying it. They kill his closest friends. They attempt to kill his son. They almost kill him. After the hardest battle of his life, neither him or Vegeta can walk, and Krillin approaches Vegeta with a sword. Vegeta is literally crawling away to his space ship, and as Krillin is about to deliver the final blow when Goku asks Krillin to show Vegeta mercy. Mercy to to guy who wanted to concur the Earth and kill everyone he cared about. As Vegeta crawls into his escape pod, he vows to make Goku regret his decision.
Vegeta later goes on to be a valuable ally and plays a major role in save the Earth from destruction on more than one occasion.

Lets say vegeta died in the sayian saga, and then the Frezia saga plays out. Even if Goku wins without Veggie's help, Future Trunks doesn't exist to stop Mecha Frezia. And even if they did beat him some how, Goku still dies of his heart attack and the androids would rule the world. And even if they managed to stop that somehow, Beerus is going to be pissed when he wakes up and learns that there's not enough Sayins in the universe to create a super sayin God.

Not to mention Buu. The Supreme Kai was against Vegeta destroying his egg because he was afraid a high burst of energy would wake him up. Given that if Frieza didn't blow it up like he did Namek, or the Androids didn't when they got bored of it, Berrus definitely would. With all the energy from that, it's bound to wake up Majin Buu.
