This is probably my only complaint about Toradora. There's good development and a strong moment of revelation when Taiga realizes that her crush on glasses would never work and that she didn't want to have to give up Ryuji, but there was no real buildup or transition for Ryuji. He was just like "welp, Minorin shot me down, I guess a Taiga is fine too."

While I agree they could've done a better job actually justifying that whole switch, there was plenty of foreshadowing about it along with Ryuji and Taiga learning what love is/isn't. They both reached the conclusion that it was something they already were in.
