Does Hayao Miyazaki really hate anime?

He hates how the medium is more commercialized and less about the art of animation.

No, that quote you see everywhere literally is made up, dubbed in over some video where he was actually saying something else.

He does think the industry has become too insular / otaku focused, but of course he does, being a guy who makes movies for a general audience he'll always think anime is not up to par if it isn't like his movies. He also has a rather warped view on things in that he owns his own studio and can call all the shots while anime studios usually are contracted out by publishers/license holders to make something thus can have little choice/input in what they are given, but they have to adapt that shitty battle harem LN just to survive sometimes.
