That's not necessarily a bad thing. Every show has a narrative to follow.

A lot of characters in shows you are describing but don't change, but they are rounded out. You see them in different situations and see how they react. You personally get to know the characters better and that really appeals to people like me.

Depends on the show, but I can definitely admit that SoL series have better art than most anime given they don't have to animate as much. The world is meant to compliment the characters, who are the main draw to the show. NNB's countryside and Tamayura's Takehara are good examples.

Depends on the show. Like all anime, some are just more terribly written or directed than others. Gochiusa, for example, isn't all that great in the writing department. However K-On!'s adaptation of its mediocre manga led to many small changes and added characterization and is pretty much a hallmark of fantastic direction, not to mention it has some of the most entertaining character dynamics in the medium.
