You know, it's kind of interesting to analyse this because Iroha gets close to 8man under the premise of liking Hayama and thus having no problem with letting it all out in front of him, and 8man doesn't have to do his mental gymnastics to explain why she's close to him because he's convinced she likes Hayama and he's deep in the acquitance/friend-zone.
Their relationship is based in this basic balance and this is exactly what lets them get close to each other openly with "no misunderstandings".
So, their relationship is as genuine as it gets if you think she likes Hayama and has no interest in 8man. If she does like 8man then even though all their interactions have been genuine the basic premise of their relationship is false.
It kind of depends on your personal view of their interactions. But even if the premise was a lie(i.e she likes 8man and not Hayama) that doesn't deny the moments she and 8man have shared, because again, they're both very open to each other, even though it would be thanks to a deception.

Iroha's pretty much the only chick I outright can't imagine ending up with 8man - and that's not stemming out of a dislike for her character or anything, I found the antics 8man and her got mixed up in to be way more entertaining than a lot of the dull mopey shit that made up a lot of the other parts of the story at that point even

I think it's a lot simpler than that. From the beginning they didn't care what the other thought, thus acted with no decorum, and despite/because of that ended up getting along quite well. This is simply good compatibility, a real-world concept that Hayama formally introduced to the story back in the Orimoto date. Their relationship is genuine in much of the same way 8man and Hayama's relationship is genuine, even if the emotional content is completely different.
8man seeing Iroha as Komachi and Iroha's whole Hayama deal are simply due to them being teenagers with a poor grasp of their feelings. 8man for instance associates Iroha with Komachi because she's the only other person that he doesn't have to care about decorum (or romantic implications/misunderstandings) with at all. We don't know an awful lot about Iroha's personal relationships, but Hayama (who does) has outright said that Iroha's misplacing her feelings for 8man on himself.
As for when things will achieve critical mass between 8man and Iroha, it's a simple matter of when 8man is forced to address his delusion that his sister is a replacement for romance. (Watari is already setting up for this with Komachi's entrance exams and/or possibly Saki's otouto.) Just like Iroha has been filling in as 8man's source of happiness during Komachi's absence, she will also take over as his lover when 8man confronts the reality of blood relationships.

I think my original point still stands in the respect that 8man being able to see Iroha as a little sister and allowing her to get close to him is all thanks to that basic premise of their relationship (Iroha being in love with Hayama / 8man being 100% a friendzoned grunt).

Yukino probably had mixed feelings about the elections, but from what we can see deep inside she had the desire to run and follow Haruno's steps but she had no reason to convince herself to do so.
When Iroha shenanigans happen she gets her reasons (helping Iroha and stopping 8man from doing dirty deeds).
That's exactly why she was shown to be somewhat down when 8man convinced Iroha to be the president, and what made 8man decide to help Iroha alone with the christmas event. To avoid hurting the part of her that actually did want to be the stuco president.
We can argue whether her motivations are legit or not (If she wished to do it herself or it was all to follow Haruno) but a part of her indeed wanted to do it.

Under no circumstances was it good for Yukino. Becoming student council president is what she wanted. Haruno knew it and even hinted at it to Hachiman. Yukino's problem as it has been throughout the series is that she cannot stand up for what she wants. Hachiman took that opportunity away from her. By what he did he was telling her essentially "stay with me because I'm afraid to lose you". He basically jolted her dependency back.
You're reading too much into Sensei's comments. Yukino had no trouble being the effective chairman for the festival. She could have been student council president. And even if she had trouble, so did Iroha. And it would have been an opportunity for her to grow, just as it has been for Iroha.
