Why do no good non-action detective / crime anime exist?
All that we got was that one about the time traveler that wasn't a mystery since they made it so obvious it was the teacher (and boy did it go downhill fast!) and I guess Ace attorney which is a video game adaptation!

This extends to other media too. Csi, ncis, law and order, the list goes on.
Why does anyone find it so hard to write a good freaking mystery.
Joker Game might be to your liking as far as crime and mysteries go.
Hyouka if you enjoy mysteries in general, because it doesn't have any interesting mystery in it. The mystery case solving is done very well for the most part.

Because of the nature of the mystery genre.
It can go two ways: you either find out who the killer is because the writer makes it painfully obvious through foreshadowing, which essentially kills the whole "mystery" aspect of the story - e.g. Persona 4 (Adachi) and BokuDake.
And in the other case, in order to keep the mystery alive, they make the killer a nobody with no foreshadowing at all - e.g. Persona 4 (Izanami) and Danganronpa.

because anime are largely aimed at the shonen demographic.
Adults tend to read manga, it tends to be more profitable to aim your work at adults. Kids are the ones in front of the TV weekly watching the advertisements in-between shitty toy commercials.
