Japanese iron was of inferior quality. Most of It'd be classified as pig iron in Europe. They had to go through this elaborate process of folding and refolding the metal in order to get steel that was actually passable and not brittle as fuck. Even then katanas are prone to snapping and chipping when they cut anything except flesh or rolled up tatami mats.
It's not like the average steel weapon in Europe was much better, but the finest steel weapons in Europe are so, so much better than anything Japan ever produced it's not even a contest. Though it's sort of cheating since Europeans were able to trade for Damascus Steel to make their finest weapons.

Actually not really. At least not in the medieval period. The swords were less brittle but had numerous other problems, like bending and dulling easily. If we're talking design though, yeah European swords are generally much sturdier because the katana is just designed to be brittle. True they are very sharp and can hold a very fine edge for a very long time, but that's about all they're good at.
