Pretty obvious that they are pulling further and further away from Earth. This means yes, it is set in the future of Frontier, but because they are much further away from civilisation it justifies the weapon technologies being more primitive. This prevents the common problem of every sequel needing to have better and better weapons all the damn time.

Mecha (humanoid form) - is easiest to control, since uses native body reflexes

The more advanced and mature a technology, the less specialist skills are needed to operate them. At this point it had been many decades, and advanced systems must have made many things much more computer-assisted than they used to be. You still need to be an Ace to beat others with the same tech, but to fly doesn't need major training anymore.

And no, it depends on the pilot. Hikaru, Alto and Shin all had experience flying planes(Hell, Shin outright flew a fucking F-14), so they had no problems with fighter mode, since its just a fucking plane. Shin in particular had like 1 month of training to familiarise himself with gerwalk and battroid, then he proceed to keep up with enemy aces.
Hayate, in this case, is a master in piloting destroids, since it has the same controls as a VF(mentioned by Hayate, and Hikaru did pilot a destroid before with no problems, so its supported by SDF Macross)

Those VFs are hard to pilot not because of them being VFs though, they were also prototypes that could easily kill their pilots.
The YF-19, iirc, killed test pilots before Isamu. The YF-21 needed a very focused pilot for its BDI system.
By the YF-19/21, they encountered the problem of pilots being too fragile, they can't go really fast or do extreme maneuvers without killing the pilot.

That seems like it'd be hard to do because those two were polar opposites released at the same time, likely broadly defining what Macross could be. Plus is just too serious to mesh well with 7, so it's almost like you have to view them in separate universes. Frontier felt the most like the original series, so we'll see if Delta mostly continues that way, but I agree with the other poster about it feeling very Macross II.
