The pacing in general.
I typically find the first 5 seasons the worst for people to get into because it's so hands-off with the plot.
Imagine a perfect world where without skipping episodes you could go from the start of the series to Haibara's introduction in a few episodes (maybe 12/24 max) instead of a hundred. Or the Bourbon arc not being nearly 300 episodes.
A new series could also fix a lot of the anime's errors like Akemi, Vermouth arc hints, and other interactions.

Also holy shit is that Ai being heroine that I'm seeing? It feels good seeing her being important again after being sidelined most of the time in recent movies and manga chapters.

As for the manga, the plot has been progressing at an unprecedented pace for the last 60+ chapters. BO Boss arc has to come after the Rum arc, right?
