Regarding Juuzou, a lot of children with light blonde hair grown into shades of brown hair. It doesn't normally turn black, though. I'm not sure what symbolism, if any, his hair is supposed to represent - he wasn't mad as much as he was just underdeveloped emotionally, though that was rectified at the end of TGrip. Kakujaneki was insane but he wasn't particularly crazy normally, either, if you ignore his suicidal tendencies at least.
