Most women want to be mothers. In fact most people in general want children.
She loves her own mother but barely spends time with her, I think that coupled with her crush on a single father with a stable job makes her maternal instincts more on the surface.
Also it's a manga written by a woman and this is far from an uncommon fantasy.

All women instinctively want to be mothers varying degrees. It's just not expressed very highly in western women (outwardly) because the feminist ideology promoted in western society actively attacks traditional gender roles. The idea of a woman wanting to get married and have children, and to be an actual mother to those children is shunned.

I hope there's romantic development for her but so far the author seems to have backpedaled on that.
