Her character growth wasn't subtle, it was just really well directed. There was lots of subtle direction in tho show like your webbum, but that doesn't mean her arc was subtle. Her arc was the core of the entire season.
What you're appreciating about those clips is the visual storytelling. The show tells the story of her character through her acting and behavior, and not just when it's important, but through a consistent attitude. Her character doesn't just pay lip-service to development, it's very much internalized. All of this is facilitated by some of the strongest character direction in the last decade of anime. KyoAni uses every tool at their disposal in effective and creative ways to tell the story of this character and her evolution. That's their greatest strength as a studio.
Does that make Hibike good? It's certainly well executed. If you're the type who appreciates well-written, well-portrayed characters with interesting relationships more than you care about a strong plot or a complex thematic message then you'll appreciate Hibike. If you don't, then you won't. Hibike has a very simple plot with really strong characters. Some people like that and others prefer the opposite, it's all individual taste. But KyoAni are the best in the business when it comes to rendering characters.
