You don't get it. Fate/stay night is a beautiful exercise in the emotional craft of storytelling. It isn't a story about mythological heroes going at war. It's a story about the importance of what heroes represent, and fighting for those ideals. Tightly plotted, thematically consistent, emotionally affecting, and incredibly layered. There's so much more to Fate/stay night than there may seem to be at first glance
UBW's story glides across the surface of an enormous ocean of philosophy. The anime simultaneously questions the metamorphosis of human ideals, man's quest for heroism, etc. If you don't understand the full weight of the words "I was not wrong", you haven't really paid attention.
There are thousands of themes seamlessly woven together. Idealism vs Utilitarianism, the importance of hope in the face of adversity, wishes as an inherently selfish act, cultural expectations of good and evil, the contradictory nature of child heroes, redemption, and a whole bunch mythic revisionism and allegory to top it all off.
Don't get me started on the visuals, every frame tells a second, sometimes even third narrative underneath the first. I think it's statement to its greatness
Nasu crafted not a game, not a "story", but a universe. It's every bit as detailed, every bit as supple and responsive as ours. It's a moving Sistine Chapel ceiling. But it's wasted on the cynics who can't discern between valid artistic statements and disposable crap.

Which is, itself, a callback to the conversation between Kiritsugu and Shirou about how in a scenario where someone takes a hostage, a hero has to choose to save either the hostage or the hostage taker - which is something Shirou logically knew but argued against because you should still try to save both.
It also ties back into the conversation between Archer and Shirou in Fate, when they're talking about Shirou's determination to not kill will only protect the ideal, but not anything else - that, due to the ideal's nature, it can only be properly made to work by compromising with the death of others.
By choosing Sakura, it's not so much the ideals he betrays as it is his promise to Kiritsugu (which Shirou often conflates).

Personally, while the Fate route has its issues, its also the route with the most potential, and seeing as we are now post F/Z, UBW animes, it would have been awesome if TM had also announced a fate readaptation, it would provide not only a better understanding of sabers past, because seriously, F/Z didnt even go deep into sabers past, while UBW only showed one fucking scene of it, a new Fate route anime could present a better route without the pacing issues and, despite understanding that the "you're a gurhl" comments are said because shirou feels the need to not see saber hurt, those should be replaced with something more fitting, it could also expand characters like kirei in regards to rin and iliya to shirou and saber because of their parents.
And lets not forget the legitimately good fights, like saber vs rider in the skyscrapper, saber vs gil, but also the offscreen fights, like properly adapting archer vs berserker, with the overedge shit and 6 or more lives that archer takes, the gil vs lancer fight and the gil vs assassin and kuzuki fight thats mentioned in HA, maybe even change some things about the second berserker fight so that the caliburn thing is less of an asspull, like archer taking more lives than just 6.
A proper church basement scene with the orphans, where both saber and shirou reach some kind of answer about their lives, and a probable adaptation of Last Episode would be awesome.
