If she still had memories when she was little, then Sasuke would have even clearer memories. And unlike that mother from Kabuto's backstory who was tricked into thinking Kabuto grew up looking different, Sasuke would have easily recognized a more grown up version of her.
Plus that way sort of loses the emotional impact the scene creates. This is Sarada's first actual meeting with him, not the first in a long time, and the only thing she's had is an ideal image of meeting him. Having their first actual meeting result in him pulling his sword at her is more devastating this way, including how he did because of the fact that he never actually saw her after she was born.

Sakura was never a great character from the start. If you think about it, if she didn't have that undying love for Sauce she would have been sidelined like the rest of the Konoha genin. The main reason she was able to stay relevant and supported Naruto so hard was because he promised that he'd bring Sauce back.
I don't get why people think Sakura is a better character than Hinata. At least Hinata has an interesting background and her own drama to deal with in her family, and I can comprehend why she became obsessed with Naruto. Naruto and Hinata came from a similar situation where they were both considered failures by society/family, respectively, but Naruto's resolve to never give up despite the circumstances ultimately left a big impact on her. Further along the series, we were able to see the resolve she had to become stronger, though her accomplishments were dwarfed by MCs and didn't leave a big impact upon readers.
Sakura's character had a lot of holes where it was difficult to near impossible to understand her motivations, which by default, was left to because she loved sauce too much and she was a kind girl hurrr
