That's a pretty common sports term.
In this chapter there are initially 55 pairs. They can't fit all 55 pairs on the dancefloor at the same time, so they divide them up into multiple "heats".
"Heat 1" means it's the first group's turn to dance.
"Heat 2" means the second group, etc.
A round of the competition is completed after all heats have finished dancing.

I don't think anyone in the manga knows, that's why they're curious about him.
He's grown exceptionally well for having so little experience.
I suppose you could say he's dedicated or a fast learner, but that's probably not the answer you're looking for.

Heats have been explained. It's a segment of a round for one type of dance. You may have more than one heat for a given dance category because you can't fit all the dancers on the floor for one go.
The art gives a very good idea of movement and flow, so it's not hard to guess what move they're doing. If they're talking about a move outside of a dance then it's usually either been done before, is about to be practiced, or will come up in a later dance.
The protagonist has good eyes(this is a plus for any sport. for dance it means he can grasp more of his partner's movements and see the flow of the dance floor) and excellent visual learning. He can't learn shit from being told things and he doesn't know how to put things into words. He's a lot better at understanding what he sees and replicating it. He's also better at expressing himself by showing, which is perfect for dance.
