You should have watched D&R before The End of Evangelion.
It's not mandatory and there isn't going to be anything new if you watched the director's cut episodes 21 to 24, which in this day are more common than the OA versions.
But I'd say it's worth it for the endings of both Death and Rebirth.
Death has a beautiful scenery with the nuked Tokyo 3 and the decapitated angel statue with Canon D-Dur orchestral version, and Rebirth has a very awesome ending (which is now not gonna be anything shocking to you, now that you have already watched EoE), and one of the best songs Yoko Takahashi ever did: Tamashii no rufuran.

Death: Original theatrical version. As far as I know, nobody has seen it other than the people who were able to watch it on the original cinema release in 1997. Supposedly it included the additional scenes that were later used and expanded on the director's cut episodes (gendo's hand merged with Adam, etc)
Death(true): this version was only edited for TV broadcast in Japan. Apparently it edited those new additional scenes out.
Death (true)2: it's the version of Death that was released on video and the one we know. it's the definitive anyway.

Thanks for reminding me OP. I forgot today was tang day. So I rewatched it today. Had to bust out and dust off my old ass DvD player because its the only thing that can read my old as fuck 2002 version of EoE.
The thing about it that always threw me off was the random Live action tid bites tossed in during the instrumentality scene. Like yeah its just crowds of people but its just so off putting to randomly cut to that in an anime movie.

The live action scene was supposed to be longer, and it was like the EOE counterpart to EoTV's "alternative reality" with schoolgirl Rei, etc.
The full thing was eventually released in one of the DVD boxes later.
It's basically a world where Shinji never existed. And it's also like a sister short film to Anno's Love & Pop.

The original Rebirth was, however, never released outside of Japan. In the ADV DVD releases in the west, "Rebirth" was just the first 27 minutes of Air from EoE, there were some changes between the original Rebirth and the first half of Air (completely different voice acting, some differences with the BGM and some different scenes as well, although nothing really new).
Tamashii no rufuran can still be found on the ADV Rebirth though.
Rebirth ends when the Eva series arrive and fly over Eva-02 in circles.

I think that this plus the first card in episode 26, "It was the year 2016 AD", are the main reasons why it's commonly accepted that Third Impact happens around the turn of the year.
