Ami only wanted Ryuuji because other girls already did. And even when she did like him, you could tell she would make it VERY difficult for him to get with her without jumping through thousands of hoops in very specific ways. In short, she's a typical stuck up girl who knows she's hot and when a guy doesn't do EXACTLY how she pictures it in her fantasy, she goes into seclusion mode thinking something is wrong with her.
Hypothetically, even if Ryuuji told Ami he was fed up with Minori and Taiga, and just told Ami that he wanted her, she wouldn't simply go along with it, she'd just make him jump through more hoops.
This fact is not only implied very strongly in the anime but even hinted at in the PSP Portable game too, in pretty much every single one of Ami's endings.

Ami looks great and a pretty decent character. Sure, the downside is that she's one of those stuck-up girl. But it was great seeing her see through the characters bullshit at the end. Her talking smack on Minori is one of my favorite scenes in the show.
Besides, the only thing we're left is two girls. One is violent and overly dependent. The other is autistic and a coward who can't face herself.
