With Dragonball being the most well known and lucrative anime franchise world wide, why has nobody successfully imitated this? That is to say huge buff guys shooting beams of energy at each other.

Shounen is dead, nigga. What you see from most Shounen writers, especially the ones from the old Big Three, is that all of them try to immitate Kishimoto. DBZ may be generic, but Toriyama originally pulled off the concept so succesfully that everyone wants a slice of the pie now.
Perhaps in a few decades a new and original idea will pop up, follwed by legions of uncreative hacks who will copy it and copy it until everything the original has done becomes a contrived cliché.
Because it already happened in the 90's and it didn't work because it's not DBZ.
