I haven't read a single LN, but judging from the anime adaptations, I don't think a single character is written with self-insertion in mind. However, its quite obvious how the MCs are written as relatable as possible, to the point of having your infamous stock harem MC.
With that said, judging on the changes from the source material, the SAO anime is written with self-insert escapism in mind. From Kirito being less scared when he is fighting Laughing Coffin to making it seem like he lost to AIDS-chan only because he wasn't trying.
How many people do self-insert anyway? Is it really that common? I admittedly used to, but I kicked that habit a long time ago.

I think its a good part of the story because Ainz is a character himself rather than an insert, so the whole world transportation thing is just used as a basis for his character so you just 'relate' to him rather than see yourself as him.

Several years ago I found myself stating that I wish more protagonists weren't spineless betas who were defended by others and yadda yadda.
