Overlord doesn't have a game world turning real but they were transported to a real world. This just makes it easier for the author as he doesn't have to actually expand on the game world. While in LH the game world is expanding every NPC is becoming real and there is a whole lot more backstory to everything. This make the game that was once as seen as a game to become more realistic, people that used the game as mean of escapism are now trapped as who they think they. And so we bring out another point. Shiroe isn't the only player that got bring there. We get to see the interactions and see how different players are handling the situations. As a conclusion, we can see and understand that LH is the superior anime in terms of story and characters. But just not animation.

Also, are you sure you have read the books? Because you're simplifying everything in such a way that it feels you've only watched the first season of the anime. Nureha is nothing like Ainz for fuck's sake.

They finished Season 2 before 10 was out, they had Marmalade Jam send them chapters while he was writing them so they would know what happens.
There is no reason Marmalade can not work with them to get a third and final season produced, where he give them the main key plot points and writes all the "important" bits himself

They could do that, but it'd really hurt the overall quality of the writing. One of S2's main issues is the pacing due to a lack of source material and general director fuck ups. Akatsuki's arc dragged on for too long and China adventures was only one episode.
I wouldn't want to see a whole season of that. Instead they could do the WWB spinoff.

Realistically, it was more or less DEEN's fault. They really fucked up the pacing on the Calling Fortress raid simply because they didn't have time. Yet the very last thing in the last book, which is Shiroe freaking out about what to do and then the talking with Kanami... They managed to hit a home run on.
Seriously, Shiroe asking her "So you want to go home right?" and her replying "No, why would I want to do that? I want to show my daughter this world", that was the best way to end a season.
If they don't announce a Season 3 soon tho, it might have been the way they end the damn series :/

They tried to cram a whole volume into 1 episode. If they just cut back on Akatsuki's arc we might have gotten more.

The pacing issues weren't reflective of them not having the material on hand. They had the books, and had access to 9, they just chose to focus on other stuff (Especially since if there is a Season 3, Book 11 starts off with China), and they nailed the Book 10 execution even though it wasn't even close to being done while they were in production for Season 2.
Taking Touhya's party on the Fortress raid was dumb, but that is a Marmalade issue and not a Deen issue. He did the same thing with the novels.
Season 1 had similar problems, with improper decision making on pacing. They breezed through some stuff and really stretched some things out that shouldn't have been... Ultimately at the end of the day the show was still good.

True, but them choosing not to focus on a good adaptation of Vol.9 means that there must be something to take it's place and the lack of abundant source material means that they had to really stretch out some of those arcs. That's why it fucked with the pacing.
If they had one more volume to work with that wasn't vol.9 episodes like Williams speech or Akatsuki's angst could have been dealt with better.

I think they just dislike Kanami's storyline, and felt that "Log Horizon" as a show needs to focus mostly on the members of the Guild more so than the World at Large.
While you could argue Silver Sword got a lot of screen time, Shiroe and Naotsugu were there. Aside from Silver Sword and West Wind Brigade for Akatsuki's storyline, only a handful of Guilds got serious screen time and never anything more significant than a single episode focused on them. Nobody on the main cast was even with Kanami and it seemed like they had to "get it out of the way" so she could be there on the Episode 50 finale.

I don't think that they could have used Vol. 10 as padding for the missing volume. It didn't feel rushed like the others and didn't drag on either. Aside from extending some fight scenes it's like they got the most out of it already.
I don't think they dislike Kanami or the China gang. A good amount of effort went into that one episode and the seiyuu that they got weren't nobodies either.
