How were they so good at playing music if they hardly ever practiced?
Can't have reality interrupt the moe slideshow. Not making them excempt from the normal requirement to perform music at a good level would have ruined the nostalgia drivel for the gook audience.

Hibike Euphonium managed to balance actual practice and realism with moe and it significantly improved the show. I see no reason why K-On couldn't do the same except for lazy writing

You really don't need to practice a lot to be "good" at playing music. I'm used to practicing songs once or twice before a gig. Their songs are pretty easy to play and it's not even all that important to play them perfectly because most of the audience can't tell and the rest don't care as long as your performance kicks ass.

I love K-ON as much as the next guy but I've seen and been in bands who play as good as they do with just as much, if less, practice. The only relatively difficult parts are Mio's bass parts. The songs are relatively well written and catchy but not hard to perform in the slightest.
Most of them are already really great at playing. Yui is just the enigma who autistically practiced all the damn time at home.

They aren't. As simple as that. Any 'good' player would tell you that HTT partitions are easy as fuck. Ritsu and Mio practiced like 4 years, azu-miaou 6 years, mugi since she's 4 so the only impressive one is Yui, and even then she had a great metalbending master for herself.
Did you miss the entire point of the show? Was K-on actually too hard for you to follow? They state multiple times in the show that they really aren't that good, but that people end up enjoying their concerts a lot because of their chemistry together and how fun they make things look.
As those above me already mentioned, most of their songs are easy to play, and most of the girls already knew how to play before starting the club.

They didn't focus on the girls practicing because that wasn't the focus of the show. Hibike is a story that is quite explicitly about music, bands, and how those things affect people's lives. K-on is about some girls who happen to also be in a band and meet because they are in a band together, but the band isn't really the central feature of the show.

Season 2 had episodes that are not in the manga (the marathon, for example), and it was a good desicion.
They can do that to provide more material for Season 3.

I don't practice any more than she does and I don't really fuck up my timing. Hell, occasionally I've had to perform songs that I had never heard before. As long as you're a decent drummer, you can pretty much instantly play any song on the drums without the need to practice a lot unless it's a particularly complex song (like mathcore, some funk and jazz songs, etc), and theirs are very simple.
When you're playing music everything sounds a lot better than from the outside. Or at least that was my experience back when I was young lad with a band.
