Ever since I finished school I started buying manga in physical format again to expand my collection from when I was in high school, I figured it would look nice on a shelf at some point too.

Some of the pages from my old books were yellowed and I don't want that to happen to my new mangas.

tl;dr how do you display your physical manga and how can I prolong their life?

Here is my collection (yeah I also collect western comics don't bully me for that please)

Are you sure that the books with the yellow pages weren't already like that when you bought them? Maybe they had been exposed for a long time? Because the only ones I have where the yellowing is noticeable are those I bought at newstands after they had been basically exposed to the open air for (I think) over a week.
Anyway the yellowing is a result of the oxydation of the the paper, so minimizing the exposure to the air, for example by putting them on a shelf in such a way that only one side of the pages is exposed, should slow down the (unfortunately unstoppable on long term) process. Also try avoiding exposure to the sun or to high temperatures in general. I'm not sure what a humidifier would do though.

Not everyone has time to learn japanese or the money to buy entire collections from overseas. Also, where I live (not an english speaking country) the adaptations are usually good (with some terrible exceptions though, like Medaka Box), I greatly appreciate the efforts that scanlators put in their work, but sometimes fanmade translations are just goofy, honestly I'd pick official ones over them.

Thank you. I've been collecting manga for over five years I think and it always feels good to admire it.
As for the paper, exposing the books like that has worked for me so far, so I didn't bother looking for another method to preserve them. I guess sealing them could work too.

I understand not buying localized anime, ad you can just download the BDs and buy the japanese BD for shelf which usually look better

But localized manga are normally better quality that the japanese volumes, and the collected works volumes being put out now are very nice. And unlike anime, reading a book off the shelf actually has a use if you dislike tablet reading.
