The whole point about idioms is that they're culturally specific and unless you're a linguistic scholar a literal translation is pointless, if not lazy. Considering any sort of natural resistance of any sort is never mentioned anywhere in the series that is exactly what it is saying. Anything else is speculation at best.
The most likely answer is that crabman isn't an expert on how things decay or preservation and just did some simple google searches to pad out his zombie info and provide a quick justification for why they aren't rotted and hideous looking without worrying too much about being realistic.

You learn it in school, but that doesn't mean you remember it.
And if zombies don't heal injuries then they don't have a means to naturally resist decay as they have no way of physically resisting it since they can't naturally replace lost or damaged cells.
