The most enjoyment I've had watching an anime was Haruhi S1, so that I guess. That said, I don't know if it would appeal as much to me now that I'm older and more jaded.
Second choices would probably be Haibane Renmei or FLCL, because they both made me grateful to be alive.

I've said it before but I thought it was great watching Hibiki and Tsubasa go from bumblefuck and enraged autist to being good friends, and seeing Chris finding people she could place trust in was enjoyable as well.

I totally agree that it was uplifting and the ending was more a happy relief than sadness. I think it was more that it really hit home for me. HR is definitely my favorite.
Honestly, I wouldn't say that me knowing the show matteres that much, it's more about me just getting bored with anime over time, but I'd love to get the feeling of playing my first VNs back if I could, but that's not happening.
