Although "demographics" is the generally preferred definition, it's actually a lot more narrow than that.
shounen/shoujo manga isn't strictly "demographics that reads them", it's actually defined as "runs in a magazine whose TARGET demograhics is ****"
So a shounen manga could be more popular to girl, and vice versa, but it doesn't change the categorization. (although such cases are very rare) The shounen/shoujo category is market definition for the sake of magazine classification.

Sure, the proper meaning of "shounen" and "shoujo" is just the demographic that a magazine is targeted to. But they both have kind of a double meaning, at least in English.
Sure, ecchi harem comedies are purely the realm of shounen mags. But if I read that series X is someone's "favorite shounen", I don't expect a harem comedy - I expect a fantasy/sci-fi/maaaybe sports setting where people fight, get stronger, have fancy techniques, and stuff.
Likewise, "shoujo" is just a demographic. But since I haven't read that many, the typical shoujo in my mind is about a girl entering high school and being romanced by a very pretty boy with lots of sparkles and bubbles.
