Anon Megumi's whole character has been " i dont know if i can make it!" then she cries " oh look i can make it!" , she has had the same "development" more than twice so far in the series and shows no promise of ever being anything but the cute underdog who shows the better chefs that you can get better with FEELS!!!
While with Erina they have already hinted at WAY more going on than just her being "the rich girl" , they showed that she had a sheltered and controlled childhood, that she grew up in an environment where failure meant you were worthless , and that she is not "allowed" to show any weakness or it counts as a failure, which is something that Saiba probably plays into.
hell its been made pretty clear that the real Erina is only really seen when she is alone with Hisako, or when she thinks she is alone, every other time we see her in public is the personality that she thinks its expected of her, or maybe the personality that IS expected of her, we know grandpa is cool but we have no clue how her parents are and how they act. so there is a lot to explore there.
there is a difference between boring and underdeveloped, and when you've had 2 whole arc of development and you are still boring as fuck there is not really much you can do for that character.
while an underdeveloped one just need to get the spot light for some time to get interesting.
