"Lavalley" is how Gilles actually looks. Since it's a human form, bracelet doesn't glow as a response.
Martinet is how he looks when he passes as a demon, bracelet could glow to him in that form.
To pass between those two forms he uses the concotion, and presumably an antidote in order to avoid bracelets when he goes back to his human form.
When with Belzebuth he needs to turn himself into a demon in order to use black magic and blend in, which is why he poses as Martinet. It is unclear wether he can use his magic as Lavally/Gilles, but his body is modified and resistant to human weapons.
Bracelets glow to DEMONS not bounties. There's enough evidence for that in the series.

The series itself is inconclusive whether Dark Jeanne is a full fledged demon or a 'human of demonic attributes' and is ambiguous about Gilles as well. It's never shown whether Kaisar's bracelet glows to Favaro either.

Rita is very loving, even if it doesn't show on her face. She wanted to stay with her parents even if they died 200 years ago. She also really cares for Kaisar, hence her tagging along.
If the concern is casting then I'm wholeheartedly behind the choices that have been made by the anime staff. The card designs are impossible to animate, and for a significant part are over detailed and ornamental but not that interesting. Take a look at this faggot here, Albert. So popular, has like 4 sets in the jp versions above PWR 37. But looks how boring he is, how generic. Look beyond the fancy art into the design itself.
And even the designs that were adapted caused the animators constant pain. They've mangled Azazel a lot in order to rid him of some of that detail, took off the harness, horns ect. and animators were still bitching about him.

A lot of the designs do have that super impractical detail style. To do it all proper they'd need high budget cgi. Would have liked more card cameos though with any they could manage to pop in though since going though the ones I've managed to get so far there's some nice possible low level monsters.

The plot and the original cast is pretty much done and Bahamut may come back after a hundred years or more but with a different story.
What I really like to see is an ova prequel showing Zeus and Satan trying to stop Bahamut or explaining what it is or where does it come from or who was that human who stopped Bahamut, something like in the first chapter.
