I mean, it is kinda sad that people see the act of itself kissing as development. But iI cant blame people because its so rare itself in shouen. I feel like in terms of chemistry between these two and them actually feeling like a real couple, they fail. How do I go about watching FMA?
I know Brotherhood exists, but I heard it's just an updated version of the original, so do I just watch Brotherhood?
It's not an updated version, it's the actual story. The first anime has plot that goes in nonsensical directions that is generally only liked by the kind of people who think Evangelion has any kind of actual religious significance instead of being one man crying about how shitty life is while masturbating over his childhood Ultraman toy collection.

Honestly I say the Original, but I am bias since I grew up watching the original first and then to brotherhood.
Brotherhood follows the manga while the Original diverts course since the source material wasn't finished at the time. Your choice of Mature/Edge (original) or Fun/Action (Brotherhood).
Not saying Mature/Edge is bad, but it is way more emotional I feel. Again this is my opinion which in some ways is probbly shit and I accept that.
Honestly, Non Non Biyori and Kiniro Mosaic are literally outstanding compared to other SoL anime.
That's because you've touched on the best of SoL subgenres, CGDCT.
It's the only SoL I'm willing to watch.
Kiniro is not that good, even though I liked it, it's far from being a great SOL, Wakaba was better.
And reminder that Hidamari Sketch, Aria and YKK are the greatest SOLs of all time.

How much Japanese have you picked up from watching anime?
I'm at the point of being able to watch without subs without getting too lost, but they often speak a bit fast for me. I have zero hope of reading/writing anything though.

Trying to learn Jap from a cartoon reminds me of those middle school kids who listened to Ramstein and wanted to learn German.
Like you I'm able to follow the essence of what is said in a shonen or a show that I've already seen,
but it's way more difficult when it comes to dialogue intensive shows like Bake and co.
What's interesting though is when you really start looking online for Japanese courses and learn a bit about the grammar and the way they form sentences.
Japanese is more like Yoda's way of speak,
starting with the subject, the thing the action will be about, and finally the verb in the end.
While in english the verb is often in the middle of...
