Take a moment to look at it from the character's perspective instead of competitively:
It's the fact that Vegeta originally wanted to kill Goku; beating him in a fight was pointless, when it was his goal to show Goku that he was inferior to him on every level, since Goku not only dared to turn down his offer to join him and Nappa, he dared to put up a fight and defended these weak humans instead.
However, it's the fact that not only did Vegeta lose to a mere human and a half-bred Saiyan, whom Goku protected, among with those inferior Earthlings, Vegeta's own life was spared by this low-class Saiyan is something that Vegeta's pride could not forgive.
Not only did Goku spare his life, Vegeta ended up relying on the same human and half-breed on Namek--where he not only goes on to get saved by Goku, when the Ginyuu Squad shows up, but Goku arrives later to avenge not only his death, at Freeza's hands, but his entire race, along with this lower-class Saiyan not only effortlessly surpasses his power, but becoming a Super Saiyan; something Vegeta only recalls from legend.
To add insult to injury Vegeta is resurrected and sent to Earth and ultimately has no where to go and ends up settling down on Earth. Even before multiple Saiyans reaching Super Saiyan was a thing Vegeta was long past the point of caring about defeating Goku; as proud Saiyan prince, he'd owed too big a debt to Goku.

It doesn't matter if Vegeta beat Goku in a fight, to Vegeta that shit doesn't matter because Goku spared him from Kuririn's bald wrath.
The fact that Yajirobe took down Vegeta's Ape form was already a massive slight to Veggie's pride, especially since he was that last pure-blooded Saiyan (ignoring Tarble) in the universe who still had his tail.
Also, I never pegged Vegeta for someone who gives a shit about winning on a technically, especially if he realizes the opponent was going easy on him.
This is why you don't see him bragging about his win/loss record, despite him cheap-shotting Goku, during the Buu Saga, to go face Buu alone. That 'win' was invalidated by the guilt he felt basically leaving Goku's son to die, while he selfishly forced Goku to fight him on his one day on Earth (remember, everyone thought Gohan and Kaioushin died fight Majin Buu).
There's also the fact that Vegeta realizes Goku was holding back on him during their match, when Goku later unveils SSJ3.
After all that bitching and basically letting Babidi ass-fuck his soul for that Majin power boost, Goku was still stronger, but still pitied him to make the fight 'fair'.
