Noob question but what is the best way to unwrap a single wood plank so that it's all real clean and easy to texture?

just use smart uv project for simple things

Add seams on every vertical edge, then add seams on all but one bottom edge, like in my pic. Then unwrap and you'll have a simple and contiguous result.
