just box model it like you would model anything.
I have made a couple of differen animals looking like origami paper models. Just try to make super low poly animals that would look like they could be folded out of one piece of paper. Dont obsess over if it could be really folded out of one paper, its only importaint that it looks right. (Cant show you my models because I made them for a client)
