That is probably why it is appealing, since it is much easier.
Doing full vectors is too hard or takes too long for some people. Doing these minimals allows them to avoid all the hard work and make simple vectors with no outlines and basic solid colors. It is that fact that it can be done quickly and with relative ease, that it flocks to people, kind of like renders.

Except you still aren't doing it right. Your shapes are messy and have too many nodes. The hair ends are poor and don't all have sharp points. The shadows and the base colors are conflicting, and you have areas sticking out everywhere. Not to mention you fucked up the colors and made it look nothing like the original, or Momiji.
You basically made a very poor attempt at creating a vector with no outline and edited colors.

What makes something a minimalism wallpaper is more up to debate. It generally doesn't have eyes and takes basic solid colors for each section of the drawing. Some add shadows or gradients, depending on the person. It is basically a simpler image.
It is more important that you learn how to use the pen tool more than anything. You need to learn how to make sharp points for the hair, and reduce the amount of nodes you use.
The vector thread has a tutorial that can help, but it is more suited for doing full vectors versus these minimal ones. It still helps teach the basics for the pen tool though. You can also google for the pen tools features to help get you started.

If you are using the pen tool in PS, Ai, or Inkscape, then every time you place a point, it is called a node. That node can be smooth or sharp, depending on what you decide, and you are given handles to adjust the shape accordingly. Having too many makes the surface rough and clunky as you have more nodes to manage and conflict with, and that's the biggest issue for your image. The hair around the top and around sharp points is rough, the eyes are rough, the furballs are rough, the mouth is rough and all the shadows are rough. Basically you don't know how to use the pen tool yet and need more practice with it.
I don't usually do minimalism images, but I did this to show how much smoother you can make an image like this. I didn't bother with the shadows though. Threw it on a random pink background so you could see the hair easier.
Also, don't fuck with Momiji's hair.

You're using too many nodes and not smoothing them out, resulting in the lumpy edges. Also try to be more consistent, like for example you smoothed the node of the left of the tie, but you made the right one sharp. Check pic related so you can see the difference in the edges.

Not the same guy, but my two cents. Practice. Know where to place nodes and use handles to your advantage. Always try with the most minimal nodes as possible. Always make a node, and see how far the handles can take you, before deciding to add another one.
Basically, just know that the more nodes you add, the more conflicts you will have. Try to minimize them and manipulate the handles as I did. You will get the hang of it the more you practice.

If you zoom in, they shouldn't be.
This is what happens with larger images, they look blurry when zoomed out, but at full size it looks perfectly alright.
It's a bit big for a wallpaper, so resizing it would do well.

Make sure you're utilizing your handles to the fullest, unless you're making a sharp curve or point, never move the handles or delete them (more than a few degrees)
If you can't reach the desired location without moving the handles, redo it until you can. Handles are there to help you not get shitty edges.

Try to remember what the vector is going to be used for, very shallow strands of hair will not scale down correctly. Think of the picture you're copying as an extremely detailed reference for your project. It's not 100% absolutely necessary to copy it pixel for pixel. If you have to make a minor adjustment to make it subjectively better, do it. (Thinks like making hair strands thicker or leaving them out all together)
As for the rest, they're mostly just points where your lines are too sharp.

Of course it looks fine on your phone, because you aren't zooming in on it like a wallpaper.
If you are doing it from Illustrator, don't export for web. It looks like shit from Illustrator. Just export it normally at 300 PPI with "Type Optimized (Hinted)" and then resize it. You can also open the Ai file through PS as a Smart Object and adjust it there and it should look fine.

It depends. Minimal vectors are weird since they don't show much sense of elevation, or changing between objects, such as a shirt from a collar, or wrinkles/folds so you may want to use a sharp point to show a transition. For the most part though, keep it smooth, especially for round objects such as breasts, tops of heads, and shoulders.

Feet and hands are both bad. The hair is also clunky and not smooth.
You need to minimize nodes and maximize handles to smooth the hair out. The hands and feet need more nodes to differentiate between separate toes and fingers.
Also, for future reference, give a link to the source so we can better critique what you can fix from the original and possibly show you what it could look like.
