Challenge can give you Y2 versions of the House of Wolves exotics as a random drop at the end. Its also good for farming with 3oC.
Nightfall has a chance to drop exotics but its not a guarantee. King's Fall has 2 exotic drop chances I believe.
Your best bet for exotics is to grind strikes or PvP with 3 of Coins active. It gives you a chance to get an exotic at the end, either from the boss in the case of strikes or as a drop in the case of PvP.

If your light is 10 or more below the encounter level, you'll do much less damage and take more. Stuff like Taken Hobgoblin lasers and Acolyte Eyes hit hard no matter your light level. As you fight them more you'll better learn to fight them. For Taken Hobs, poke from cover and kill them then hide behind something. For Acolyte Eyes just focus them ASAP, they're more deadly than Taken Acolytes.

Doesn't really matter for raids. Kings Fall especially is more execution focused than it is on your stats or perk load out. Most Warlocks like to max discipline and strength; Warlocks have fantastic grenades overall and some of the best melee attacks in the game.

You can max 2 at max light yes. You can have 2 max and 1 at tier 2, referred to as being Tier 12. It takes a fair bit of grinding to hit T12 and its not necessary for anything, it's more of a meta-game task to complete.
I'd focus on maxing a single subclass first but in time you want all 3 maxed. Sunsingers can self-res which can be useful as long as you don't over rely on it.
