slow rise into slam can be avoided by just walking towards him which allows for a good punish
remember that double fast swipe can be followed by a stab - never punish it right away
slow stab can be avoided by walking around him but it's better to sprint
bleed works well against him and you can reapply Rouge after every stagger

If you're using some shit like GCFO, practice in Firelink, stand on the stairs, move up a bit or something after every cast and try to hit the bonfire. That's what I did.

If you want to keep your endurance efficient and damage high, calculate how much stamina it takes to swing your preferred weapon twice and roll and keep your endurance at that range.
