I feel like they deliberately made the hybrid casting tool/weapons weak and shitty because they were worried that having faster, more viable spells like flashsword and great dart would be too good on a melee spellcaster build like that, and obviously knew they weren't going to have time to properly balance magic before release.
I expect we'll get more interesting casting tool weapons in the DLCs, though I don't expect the Blue Flames themselves to make a comeback since their lore was kind of a dead end.

Chaos zweihander is a DS1 thing. Chaos weapons were perfect, if you wanted a good weapon at minimal stat requirements. You could achieve endgame damage values while having only 16 STR and 10 DEX.

He was using iron flesh for an extra +100 poise.
Also rolling attacks deal low poise damage but always stagger outside of hyperarmor, and greatswords did not have hyperarmor in 2. His poise wasn't even a factor in that webm.
