Depends on what kind of build you want. I went pure str so I ended up having plenty of points leftover to dump into vit after leveling my vig and end. Heavy armor is kind of bad but being able to have a decent roll while wearing med armor and carrying 3 weapons is nice.

I just wish the host was unable to summon more people upon being invaded and the only help he had would be whatever summons he had with him at first or the sentinels. So I unlocked the elevator to the Twin Princes, went down to spend my souls before going to the fight, took the elevator back up but died in the fight. Now the elevator only goes down, got the titanite slab, but I had to go the long way around to kill the princes. Any reason why the elevator wouldn't go up ?

So from what I gather, the Cathedral of the Deep is actually the Way of White, who have abandoned worship of Lloyd and now worship Saint Aldrich as a sort of prophet.
Aldrich was entombed in the Cathedral of the Deep, but also resided there before he became a Lord of Cinder. Aldrich is a cannibal and former cleric from Irithyll who became a monsterous sludgeworm by simply eating too many people
The Way of White go to great lengths to feed him and dispatch evangelist preachers to settlements in order to spread the word of Aldrich and convince followers to prepare sacrifices to feed him.
The Undead Settlement is one such place, and in the past, before Aldrich became a LoC, they would prepare corpses and undead to be sacrificed to Aldrich. The bodies, once properly butchered and processed, would be transported down the Road of Sacrifices to the Cathedral to be his meals.
After Aldrich linked the fire himself, there was no longer a need for sacrifices and the road became unused and overgrown, eventually flooding and becoming a swamp without anybody maintaining it.
The settlement still continues to prepare sacrifices because, being undead, they no longer really remember what purpose it served or why it was done, and do it because it's the only thing their hollowing minds remember. With no road to send them along, the prepared corpses simply accumulate and get tossed in a corpse-pile underneath the local church.
When Aldrich awakes, he disregards the summons from the bell and his duty as a Lord of Cinder because he'd received an invitation (i assume) from Pontiff Sulyvahn, who had prepared the last God of Anor Londo as a sacrificial meal. Aldrich jumped on the chance because he believes he'll need the power of the Gods in order to lead his people in the coming Age of the Deep Sea, which he's seen in prophetic visions following the ultimate end of the Age of Fire.

Phrase it however you want the enemies are still balanced around you having that 40% "extra". The numbers are there with an average player having around 1k HP late game unembered and even medium resists enemies will hit for a ballpark of 600 per swing if its a moderate enemy or 400 per swing for a smaller enemy but like most they flail. This is the only souls game where I feel like getting hit once can spell a death sentence in non-embered form. Demon's souls was probably the only other game that had enemies hit this hard but they at least had the decency to be staggerable.
