War with the Omnics ended at least a decade before the events of the game. Overwatch officially ended six years before the game began, but Soldier: 76 mentions that Overwatch was around for years. His statue and portrait are based on him from back when he was pretty fucking young. Since both Reaper and Soldier were in the super soldier program, they're both probably close in age and sitting around their 40s or 50s.
As for what happened to them, Reyes/Reapers was butthurt because Morrison/Soldier had been named the official commander of Overwatch. Reyes lead Blackwatch, their covert unit, and McCree trained beneath him. There's even some flavor dialog where Reaper tries to brag about teaching McCree everything he knows. During the infighting they set off some massive weapon within their Swiss HQ, blowing it to shit and seemingly killing both Reyes and Soldier. Soldier reemerged after six years in order to seek vengeance against the people who had wrongly accused Overwatch of being a corrupt organization. Reyes became some sort of monster who's cells were in a constant state of degradation and regeneration who was murdering former Overwatch agents. Soldier looks the way he does because he got (literally) blown the fuck out.

Overwatch picked him up, Mercy patched him up and they offered him a new body in exchange for help in dismantling his family's criminal empire. The only "hint" of Mercy being even remotely related to Reaper's condition is the fact is his exchange with her where she asks what happened to him and he notes that she would have a better idea than him. Essentially, Morrison, McCree and Reinhardt have been integrating Tracer, Winston and Genji into post-Omnic Crisis Overwatch and are holding a graduation party of sorts (note the similar outfits Tracer, Winston and Genji are wearing, orange, black and gray).
Morrison and Reyes, already both probably in their late 40s, thanks to the super-soldier program, essentially literal Captain America's, slowing their physical aging, or at least, making it so that their body starts physically deteriorating when they're closer to 60 when normal people start showing gray hair etc during their early to mid 40s.
I have no fucking clue what Pharah's mother is doing there. I mean sure, she was part of Overwatch but how the fuck is she that young looking? What has happened to Reyes (Reaper) is that his cells are constantly deteriorating and reviving themselves, making him literally Deadpool that turns into smoke. I think Mercy tried to save Reyes somehow but failed, then Talon got hold of Reyes's body somehow and brought him back, either brainwashing him or lying to Reyes about who killed him and why they did it. I mean, it's not like Reyes was on good terms with Overwatch since he was the de-facto leader of Blackwatch, which turned into Talon, or at least many of its former troops went to Talon for work (McCree comic, one of the Talon troops recognizes McCree and then talks about how he's looking forward to killing him.)

I've never seen a game get this much fan support before release. The fan art, the waifus, the constant discussion about anything related to the game. People are loyal to the brand already. I don't think Blizzard expected this.

Like half the characters are not former Overwatch agents, if not more. They're just people of note, and I assume the driving force of the 'plot' as it were is Overwatch's legacy/reformation. Winston seems to want to reform Overwatch to counter Talon/rising concerns over people trying to disrupt peace between Omnics/Humanity.
Soldier 76 is on a hunt to figure out what drove Reyes to fuck up Overwatch. Reaper is out for revenge on Overwatch in general.
People like D.Va, Pharah, and Lucio are just notable peacekeepers/do-gooders for their respective countries. Symetra also kinda falls into that category but is also pretty easily manipulated and works for a shady as fuck company.
