You detonate all bombs manually. Actually, now that I think about it, they COULD manually go off if they hit an enemy directly, which happens in a lot of Zelda games, but I didn't see that happen.
In any case, it is 100% possible to throw a bomb down, jump on your shield when you're right above it, and detonate it with the Item button. It's just that nobody tried it at E3.
