You want to be a huge wall of meat because it comes with more interesting skills. Like HP cannon that deals revenge damage based on how much health you're missing or berserk skills that become more effective as you have less HP. If you need 20% for the maximum strength buff it's way more effective if youre 20% is equal to someone elses 100% so you aren't actually fighting at a disadvantage.

HP may not be a guarantee against ailments. Depending on the battle formulas, things like poison may deal damage based on percentage of your maximum health, rather than a raw number that could be ignored as you reach higher levels of play.
But it's still a pretty solid choice given that you just have more fucking health, to deal with all the beatings that come along while you're poisoned.

Depends on the game. But if you're fighting a guy with high attacking speed but no damage, if you haven't invested in defense, you're maximum fucked.
HP because defense is so nebulous. Sometimes it means a percentage of damage taken off, sometimes it's just a counter to be able to avoid low damage attacks altogether. Sometimes it lowers throughout a fight based on hits you've taken, sometimes it doesn't. Sometimes enemies might be able to attack through your defense.
I'd rather just have HP and know that I can, without a doubt, take demonstrably more hits than I used to.

Because half the attacks in the game will outright ignore Defense, either relying on a completely different attribute or just bypassing attributes completely, but there are few (if any) attacks which can outright ignore HP. Throw on a HP-Regen effect that recovers a percentage of your Max HP, and you have an excellent tank which can quickly recover back to full outside battle.
Just carry those antidotes to get rid of poison.

When you're dealing with damage that ignore armour, HP is always better. It also depends on whether or not defence reduces by a percentage or a flat amount.
If it reduces damage taken by a percentage and you have a means of healing yourself, defence essentially extends your life, but also makes it so that you can recover that 'life' more easily. If it reduces damage taken by a flat amount, it then depends on how much damage you take from attacks compared to your defence.

Generally you want to have both, because flat hp is good against everything but when dealing with stuff that's reduced by defense defense scales to give you exponentially more hp than if you'd just bought straight hp.
Having 1k health and taking 100% damage means you have 1k health.

I generally despise games with a huge numbers attached to them, it's much harder to gauge out how much certain things affect your performance without downright pulling out a calculator or doing rough estimates.
It's one of the reasons i love playing RPG:s that generally handle things with number caps like 999 or 9999 without ever going past four digits. Just makes the game and balance a lot more manageable.
