Biggest evidence of this in terms of enviroment can found first in the undead settlement (enormous fissure splitting it's way through the area) next go to the profaned capitol. You dont think the entire city was just that one area and yhorms palace was normally cleaved in half exposing it from the cliff side do you? As for why he is huge, he could possibly be part of a race of larger then normal humanoids (some of the other skeletons in the crypt are far too large to be normal humans) or it could just simply be he has a huge soul form conquering many places so he's huge. The other people we've seen who have great and powerful souls have always been at least a little large if not huge (Vendrick, various kings in the DLCs, even Gwyn and company to some extent)

It seems that the soul of cinder is the fusing of every soul that has ever linked the flame, but every time somebody links the flame, the flame itself becomes less powerful, so the features of their soul are not as pronounced. The firat part of the fight is against the chosen undead, the thing that kindled second most powerful flame in history. I personally think untended graves is the real firelink (previous flame was not kindled by its would-be champion, gundyr), and ludleth created a fake one, elsewhere, to convince people they should rekindle the flame (the flame seems to never be permanently unkindled because it reignites itself after every age of dark, the firelink firekeeper literally says so, but it gets weaker each time and eventually it will be unable to reignite itself, hence the everlasting age of deep). If you find the eyes in untended graves and take them to ludleth, he hints as much.

Lothric was a land of angel worship, the winged knights are meant to replicate angels and there's a miracle found near the end of the game that talks about some woman being visited by angels. One of the only depictions of angels in the actual game is statues near the Dragonslayer Armour bonfire which show primordial serpents with wings.
If you kill Yuria, she calls out to Kaathe. Londor's probably New Londo as well. Also, they probably wanted to avoid any direct connections to DaS2 lore, but the pilgrims are literally Pilgrims of Dark.
