They could have just given the Legenday enemies double the health they currently have instead of this mandatory heal for 100% HP

It catches you off guard and forces you to adapt to a new situation. I've had some pretty interesting encounters because I've thought a fight is drawing to a close but then somebody mutates. It would have been nice if the character models physically changed to reflect mutation.
