It's already been established by Miyamoto that "one girl and one boy will be born" is part of the legend. Since it's called the Legend of Zelda, that girl has to be Zelda, and the boy has to be Link.
Also Link has always been mostly the same boy with a similar personality in the games, although his hair changed from brown to blond to pink but that's about it.
